It’s so easy! I’ve been really wanting to get in to baking more with coconut flour. If you’ve been around for the last year and a half we’ve been trying to eliminate refined flours and sugars completely from our home. It’s tougher than you think! Last summer I attempted a coconut flour recipe that was a disaster and haven’t touched the flour since. I thought I’d give it a go last weekend and not only found great success, but ended up with the most delicious healthy muffin I’ve ever tasted!

We have the organic virgin coconut oil, organic chia seeds, organic hemp protein, and organic coconut flour! When I looked on the back of the flour package and saw we had everything to make the muffins I was overly excited to give them a try! In competing in my health challenge healthy snacks are of utmost importance. I need something that not only fits within my calorie goals, but is quick to grab, and of course tasty. These muffins fit all of those requirements! At only 112 calories each they are perfect for my mid-morning and/or mid-afternoon snack! For being gluten & dairy free I was surprised at just how awesome they taste!!

Ingredients

  • 1 c. Nutiva Organic Coconut Flour
  • 1/2 tsp. sea salt
  • 1 tsp. baking soda
  • 1/2 c. + 2 tbsp. raw honey
  • 1 c. coconut milk
  • 6 eggs
  • 4 tbsp. Nutiva Organic Coconut Oil melted
  • 4 tsp. vanilla extract
  • 4 tbsp. Nutiva Organic Chia Seeds
  • 1 c. fresh organic blueberries

Instructions

  1. Preheat oven to 350 F.

  2. Sift together the coconut flour, salt and baking soda in the bowl of your stand mixer.

  3. In a blender, blend together honey, coconut milk, eggs, coconut oil and vanilla until mixed well. Using the whisk attachment, gently whisk in the wet ingredients into the dry ingredients; add chia seeds.

  4. Fold in blueberries and pour batter into greased or lined muffin tins, filling 3/4 full.

  5. Bake for 25 minutes until muffins turn gold brown & toothpick inserted comes out clean. Immediately remove from tins and cool on rack.

    Hi, I just made these…very nice…though I filled up the muffin cups in the pan right to the brim and baked at 400F instead….it helped to create that domed muffin top….I only got 9 muffins this way…so maybe next time I will double the recipe?

    Made these for myself and the housemates the other day, everyone really liked them. Very moist, and the chia added some nice texture. I could even do without that 2 extra tbsp of maple syrup as they’re quite sweet (pumping up the moisture elsewhere of course).

    I always seem to have problems with coconut flour I made these and the flour just seemed to soak up all the wet ingredients

      Cooking with coconut flour is quite different than cooking with regular flour. The key is to make sure you use enough liquid. Give these muffins a try (unless you have already). This was my first successful recipe with coconut flour!
