Stace brought this Cinnamon Cake to work one Friday and everyone raved about it, including myself. It’s kind of like the cake version of the cinnamon roll. It makes a lot, so don’t make it if you don’t have anywhere to take it ;). If you are like me, and didn’t know what a jelly roll pan was – I will clue you in (I googled it). It is a wide, flat pan similar to a cookie sheet but with deeper sides. Good thing I had one of those!

Cinnamon Cake
Like a cinnamon roll, but Cinnamon Cake! It's the perfect way to start your morning on the weekend, great to take to work gatherings, or even better for a special treat after dinner!
Ingredients
- 1 c. sugar
- 3 c. flour
- 1/4 tsp. salt
- 5 tsp. baking powder
- 2 eggs
- 1 stick 1/2 c. butter, melted
- 1 1/2 c. milk
- 2 tsp. vanilla
- 1 stick 1/2 c. butter, melted
- 1 tbsp. cinnamon
- 1 tbsp. flour
- 2/3 c. brown sugar
- Powdered Sugar Glaze: may need to be doubled
- 1 1/2 c. powdered sugar
- 2 tbsp milk
Instructions

Preheat oven to 375 F.

Mix together first 4 ingredients: sugar, flour, salt and baking powder. Add eggs, melted butter (1 stick), milk, and vanilla. Pour into greased jelly roll pan.

In a separate bowl, mix together melted butter (1 stick), cinnamon, flour, and brown sugar. Drizzle over top of the cake batter. Weave butter knife across batter to incorporate cinnamon mixture.

Bake for 20-25 minutes. Cool slightly; glaze.

For the glaze: Mix powdered sugar and milk until well blended.
Recipe Notes
[My 2 Cents]
Heat together the cinnamon mixture - melt together butter, cinnamon, flour, and brown sugar. This will make it easier to drizzle over the cake batter in a more steady and even flow. Be careful not to "over saturate" one area of the batter with cinnamon mixture.

I made this as a dessert one night, and served it hot, with vanilla icecream, and hot carmel sauce. I doubled the Powdered sugar glaze, because I LOVE icing! I may even tripple it next time :) Great recipe! Thanks Yvonne!
