You guyz. It’s National Pancake Day! If I could have had my dad guest post I totally would have – because his pancakes are my FAVORITE. However, it wouldn’t have been very original because all it is, is bisquick, an egg and some milk. For some reason when he makes them they taste magical. Growing up us kids would always love when he’d make them for us. Now as adults, us kids still love when he makes them for us. Instead, I’ve got an equally delicious recipe for you. You’ve had a german pancake (or Dutch Baby as they are also called) but have you had this delightful chocolate covered strawberry version? Probably not… but I’m here to change that. This would be the most excellent breakfast to wake up to!
I LOVE the combo of chocolate + strawberry. I.e. my Whole Wheat Dark Chocolate Covered Strawberry Waffles and No Bake Chocolate Strawberry Icebox Cake. To celebrate National Pancake Day I decided to think a wee bit out of the box and came up with this heavenly concoction. But that’s not all, I’ve got 11 other friends that have just as delicious recipes for you too. All of them totally look drool-worthy, and I’m adding them to my to-make list STAT.. because lets be real, we all know how much I LOVE breakfast. Can I get an amen? Happy celebrating. You've had a german pancake (or Dutch Baby as they are also called) but have you had this delightful chocolate covered strawberry version? Probably not... but I'm here to change that. This would be the most excellent breakfast to wake up to!
Melt butter in a 9x13 pan while oven preheats. Heat oven to 425 F. In a blender, mix eggs and milk; add flour and salt and blend again. Pour mixture into pan with melted butter. Bake 15-20 minutes. The batter will rise but not run over.
Top with fresh strawberries and drizzle with melted chocolate. Sprinkle with powdered sugar (optional). Serve immediately.

YUM! I seriously have a place in my heart for dutch baby pancakes. Morgan’s mom introduced them to me and I’ve been hooked ever since. I can’t wait to try it with strawberries and chocolate!
