You may have seen my tease of these cookies on Insta last week. Which team are you? Personally I am team… both! They are both so wonderful – which is exactly why these brownie cookies are perfect! My darling friend Aimee of Like Mother Like Daughter recently published her FIRST cookbook! 50 Fixes for Brownie Mixes. Doesn’t that sound like a cookbook you need in your arsenal? As I was thumbing through all the delicious recipes I had the hardest time deciding what I want to make for you. There’s a selection of decadent brownies, brownie batter desserts, brownie mix-ins, and other brownie delights. All of which look mouthwatering GOOD!
Let me tell you about these brownie cookies that I tried. They are are ah.ma.zing. Honestly, one of the BEST cookies I’ve ever made – and I’m not just saying that because Aimee is one of my besties. I’m saying that because it’s absolutely true. Since I didn’t want three dozen of these temptations lying around I took them to work the day after I baked them and co-worker after co-worker kept giving rave reviews. ‘These are the BEST cookies I’ve ever had. Ever.’ said my friend Cassie. ‘This chocolate chip cookie recipe is going to replace my go-to chocolate chip cookie recipe’ said my friend Alli. ‘These were SO good’ said another… and another.. and another. Until they were all gone I kept getting praises of how yummy they were! If this recipe is that good, I already can’t wait to try more. Gret job Aimee, you knocked it out of the park!

Chocolate Chip Brownie Cookies [a.k.a. Brookies]
Ingredients
Chocolate Chip Cookie Dough
- 1/2 c. butter 1 stick
- 1/2 c. brown sugar
- 1/2 c. sugar
- 1 tsp. vanilla extract
- 1 egg
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 3/4 c. flour
- 3/4 c. chocolate chips
Brownie Cookie Dough
- 1 18-oz. box brownie mix (I used Better Crocker Supreme Triple Chunk)
- 1 large egg
- 1/3 c. butter softened
- 2 tbsp. water
- 6 tbsp. flour
- 3/4 c. chocolate chips
Instructions

Start with making chocolate chip cookie dough. Cream butter and sugars together until light and fluffy. Stir in vanilla and egg. Dump in baking powder, baking soda, salt and flour. Stir together. Fold in chocolate chips. Wrap in plastic and place in fridge.

Combine brownie mix, egg, butter, water and flour in a large bowl. Fold in chocolate chips. Wrap in plastic wrap and place in fridge until oven is fully preheated. Preheat oven to 350 degrees F.

Take 1 tablespoon of each cookie dough and push them together, roll them into a ball, and place them onto a cookie sheet lined with parchment paper or a silicone liner. Bake for 9-11 minutes until cookies are set and start to turn golden.

Allow to cool for 4-5 minutes on the cookie sheet before removing to a cooling rack to cool completely. Repeat with remaining cookie dough on a cooled cookie sheet.
