Hold up. Is it SERIOUSLY September already? It can’t be, it just can’t. SEPTEMBER? What? How? Why? Clearly I’m having separation issues from my beloved May, June, and July… and I guess I’ll throw August in there too. At the turn of the new month I’ve been seeing #allthethings apple, pumpkin, and of course… Halloween. My bestie Alli LOVES her some Halloween. For the month of September she hosts a “30 Days of Halloween” series that I’m so happy to be a part of! If I have to embrace the change in seasons I may as well hold hands with friends while doing it! This is her fourth year, and my 2nd year participating. Last year I created my Tropical Candy Corn Parfait (case in point of my separation issues with warm weather – HA!). This year I’m continuing the ‘candy corn’ theme with this fun (and delicious) smoothie.
I wanted to create something healthier than the sugar loaded treats that are more common. Don’t get me wrong, those are always an option but why not try something different? I like the challenge [at least a challenge to me] to develop a recipe that will be just as enticing and just as scrumptious. This smoothie? Nailed it! I’m already a smoothie fan as it is, so this is just a festive way to enjoy it. So what are your plans for next month? Do you already know what you’re going to be for the big day? Candy Corn Layered Smoothie
Ingredients
Vanilla layer
- 1.5 c. Vanilla ice cream of your choice I used a dairy free ice cream
Peach layer
- 1 c. frozen peaches
- 1/2 c. white grape juice or any other liquid, more if needed to reach desired consistency
- 1 tbsp. honey more if desired
Pineapple/Mango layer
- 1/2 c. frozen mango chunks
- 1/2 c. frozen pineapple
- 1/2 c. white grape juice or any other liquid, more if needed to reach desired consistency
- 1 tbsp. honey more if desired
Instructions

Using your high speed blender, blend ingredients for each layer separately. Layer one on top of the other, filling a third of the way for the ice cream, a third of the way for the peach layer, and finishing a third of the way with the pineapple/mango layer.
