You guys. This recipe is GENIUS! The second I saw the mini corn tortillas at the store I KNEW I had to make something fun with them. When I remembered I had some Johnsonville Fully Cooked Breakfast Sausage in the fridge the wheels started turning in my head. At my sisters wedding recently she had a taco truck serve the food. Everyone loves tacos and I love breakfast… put the two together and you’ve got Breakfast Street Tacos! Brilliant I tell you!! Not only that, these little babies are so dang easy to make you can have them any day of the week.
Quick and easy breakfast ideas are my jam. I’m always telling you guys about my rushed mornings and daily running out the door. Thankfully these sausages are ready in 30 seconds! I got a little time for that. Already I can’t wait to have these again – and knowing me, I’ll probably be making them every morning for the next week… they are that delicious!
Breakfast Street Tacos
Ingredients
- 1 pkg. Johnsonville Fully Cooked Breakfast Sausage
- 8 mini corn tortillas
- 4 eggs scrambled
- 1/2 c. cheddar cheese
- 1 medium tomato chopped
Instructions

Warm the tortillas for 30 seconds on each side in a dry skillet or on the grill, until toasty and pliable. To make the tacos, fill one of the warm tortillas with about 1/4 c. scrambled eggs down the center, and sprinkle with some cheese, a Johnsonville Fully Cooked Breakfast Sausage, and chopped tomato.
