Well, with all that said, surely they don’t taste great. That’s where you’d be wrong. They are fantastic. Sometimes to me things sweetened with Stevia have a bit of an aftertaste. These do not. As I was making and finishing up this dessert, the hubs said ‘hey, a dessert I can actually eat!’. Seriously. The crust on this is phenomenal. Oh and that peanut buttery filling? Equally amazing. In fact, the filling reminded me of my 2-Ingredient Peanut Butter Banana Ice Cream! Ahh, and then finished off with the peanuts and baking chips… just too much I tell you!

No Bake Peanut Butter Pie
Have you ever dreamed of a No Bake Peanut Butter Pie that was healthier than you'd imagine? This is the recipe for you! Small slices go a long way, because although there isn't any refined sugar - it's still a very rich dessert!
Ingredients
Crust
- 1 c. rolled oats
- 1 c. almond flour
- 1 c. walnuts
- 1 c. cashews
- 3 tbsp. maple syrup
- 2 tsp. vanilla
- 1 tsp. cinnamon
Filling
- 2 c. organic peanut butter
- 3 medium/large ripe bananas
- 1/4 c. honey
- 2 tsp. vanilla extract
Topping
- 1/3 c. roasted salted peanuts
- 1/3 c. + 1/4 c. reserved Lily's Dark Chocolate Premium Baking Chips
- 1 tsp. coconut oil
Instructions

Add the crust ingredients to your food processor and process until you reach a fine crumbly texture. Gently press with a spatula to form a crust until evenly uniformed through all sides.

In a high speed blender, add your peanut butter, bananas, honey, and vanilla. Blend until smooth. Spread filling over crust, sprinkle the peanuts and 1/3 c. Lily's Dark Chocolate Premium Baking Chips over the pie.

Place the remaining 1/4 c. baking chips and coconut oil in a small saucepan and stir until the chocolate has melted.

Drizzle the chocolate over the pie and freeze until solid for at least 4-6 hours. Store leftover pie in the freezer.
Recipe Notes
Be sure to make this in plenty of time before serving, you will want at least the 4 hours, but the longer you can freeze the better. Thawed, it's a very heavy dessert. Frozen allows you to enjoy the perfect small slice at just the right consistency!
