It’s that time of year where I LOVE all things apple. Well, really, I’m an apple fan all year long. I’ll tell you what I’m not a fan of, that’s pie. Shocker. I just can’t get down with the pie crust. I’ve never been a crust fan. So with this little parfait dazzler I can have apple pie ‘essence’ without the crust! Not only that, this is a fantastic and healthy breakfast idea. Another one of my fav go-to snacks is apples & peanut butter! So by mixing the crumble with pb it’s like the best of all the worlds!
One more great thing about this parfait is just how quickly you can whip it together. The crumble is no-bake, so unlike typical granola, you don’t have to bake it…wait for it to cool… yada yada yada. The crumble reminds me of what I used for my Red White & Blue Strawberry Blueberry Dessert Parfaits (except without the sugar or butter!). If you’ve got an abundance of apples, want a little healthier breakfast option: I’m your girl, and this is your recipe! Enjoy!
Apple Pie Parfait
This Apple Pie Parfait is a perfect healthy fall breakfast idea that's completely guilt free!
Ingredients
- 1 apple
- 2 tbsp. lemon juice
- 1/4 c. oats
- 2 tbsp. peanut butter
- 1 tbsp. sunflower seeds
- 1 tbsp. chia seeds
- 6 oz. nonfat Greek yogurt
Apple Pie Spice
- 2 tbsp. cinnamon
- 1/4 tsp. ground allspice
- 1 tsp. ground ginger
- 3/4 tsp. ground cardamom
Instructions

Finely dice apples (with skin) and mix with lemon juice; add 1 tsp. apple pie spice.

In a separate bowl, mix together oats, peanut butter, sunflower seeds & chia seeds. Add 1 tsp. apple pie spice & mix well.

In a separate bowl mix together Greek yogurt & 1 tsp. apple pie spice. In a glass, layer yogurt, crumble, then apples & repeat.
