When I presented at the Salt Lake Home Show last month, my theme of the hour was ‘The Lighter Side: Your Guilty Favorites Made Guilt Free’. I made my Healthier Zupas Nuts About Berries Salad Copycat, Mashed Cauliflower Shepherd’s Pie, and I whipped together my Strawberries & Chocolate Buttercream Mousse! This recipe couldn’t be more representative of the theme for my presentation. At first glance, you’ve got to think that yummy chocolate buttercream is loaded with all sorts of sugar. Am I right?! Nope! You’d be mistaken!
This chocolate buttercream is 100% guilt free. 100%. Just look at how rich and creamy that is. Now imaging a spoonful of it. Simply delightful. As I was cleaning up my presentation, a good friend of mine was munching on some of the samples put together my chocolate buttercream with the Maple Candied Almonds and said ‘you know what this reminds me of? An almond joy!’. That’s where this recipe was born, I knew immediately I would have to make a recipe of the yummy awesomeness all together. It’s totally fantastic, I hope you’ll give it a try!
Almond Joy Chocolate Buttercream Parfait
The chocolate buttercream in this Almond Joy Chocolate Buttercream Parfait is to die for, it's wonderfully decadent and completely guilt free! Win/Win!
- 1 c. dates
- 3/4 c. water
- 1/4 c. cacao powder
- 2 tbsp. cashew butter
- 2 tbsp. coconut oil
- 2 tbsp. real maple syrup
- 2 c. strawberries washed & sliced
- 1/2 c. unsweetened coconut flakes
- 1/2 c. Maple Candied Almonds
For the chocolate buttercream: In a blender or food processor, blend all ingredients until smooth.
Refrigerate overnight so to develop flavors and mousse-like consistency.
When ready to serve, top with coconut flakes & maple candied almonds. Enjoy!
