It’s time for another ‘celebrating food’ post! September is National Breakfast Month and I couldn’t be more excited for that. Why? Because I LOVE breakfast! I mean I REALLY love breakfast! Oftentimes I find myself wanting to primarily post breakfast recipes… and then I remember there are other meals in the day that people need to eat for. Just the other day I shared my Whole Wheat Apple Pie Waffles with you and loved them. Today I’ve got another fun waffle recipe for you! I mean, who can go wrong with chocolate? Add chocolate covered strawberries, a chocolate drizzle, and a sprinkling of mini chocolate chips and you’ve got a pretty decadent breakfast!
You only need a handful of key essentials: your waffle maker, a batter bowl, and your trusty whisk! One of my secret weapons when it comes to cooking without refined sugar is Coconut Secret Coconut Crystals. I can’t even remember how long I’ve been using it but I discovered it maybe a year or so ago? I found it on a clearance shelf at the grocery store and wanted to give it a try. So I bought four cartons of it. And I’m currently down to one! It’s seriously awesome and swaps 1-to-1 exactly for white sugar. Whole Wheat Dark Chocolate Covered Strawberry Waffles
Looking for a fun new way to enjoy breakfast? Try these delicious Whole Wheat Dark Chocolate Covered Strawberry Waffles. The best part about them? They are actually not bad for you! You'll be surprised that they are made with whole wheat flour and no refined sugar! Drizzled with dark chocolate and covered with fresh strawberries. A beautiful way to start your morning!
Ingredients
- 2 c. whole wheat flour
- ½ c. unsweetened cocoa powder
- ¼ c. coconut palm sugar
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. kosher salt
- 1/4 c. mini chocolate chips
- 3 large eggs separated
- 2 1/2 c. buttermilk
- 1 tsp. vanilla extract
Topping
- Dark chocolate chips melted
- Fresh strawberries
Instructions

Whisk flour, cocoa powder, coconut sugar, baking powder, baking soda, salt and mini chocolate chips in a large bowl.

Make a well in the center and add egg yolks, buttermilk and vanilla. Blend the center with a fork, then gradually incorporate dry ingredients, mixing just until combined.

Using an electric mixer on medium-high speed, beat egg whites in a small bowl until soft peaks form (approx. six min).

Working in 2 batches, fold egg whites into batter just until combined.

Heat a waffle iron until very hot; lightly coat with nonstick spray. Working in batches, cook waffles until lightly crispy. Transfer to a wire rack and keep warm in oven until ready to serve.

Serve waffles with a drizzle of melted dark chocolate fresh strawberries, and a sprinkling of mini chocolate chips.
