Happy National Waffle Day! I know that many people think the ‘national this and that food holidays’ are silly. But you know what? I love them! I think they are such a fun way to celebrate! There’s so much negativity in the world and sad or bad news everywhere you turn, why not have a little fun and celebrate something that may seem silly? There’s no harm in that right? Plus – with a recipe like these Whole Wheat Apple Pie Waffles you will want to celebrate EVERYDAY! They are SO freaking good! When Post sent me my fun new Cuisinart Classic Waffle Maker & Post Grape-Nuts Cereal I could hardly wait to get in the kitchen and create a special recipe for today!
As much as I hate to say it Fall is right around the corner. I know. I know. I just can’t get over summer coming to an end. Give me another few weeks and I’ll adjust. Until then I’ll continue to boohoo. Bear with me. With the change in seasons hot on our heals I’m starting to think about the flavors of the season. Fall screams apple pie to me and I thought it would be the perfect inspiration for my waffle recipe! I love my 100% Whole Wheat Waffles and Gluten Free Banana Nut Waffles, so I’m excited to add another great recipe to the mix. With 100% of your day’s whole grain and plenty of fiber, Grape-Nuts is power-packed nutrition and a perfect addition to these waffles! Give them a try, you won’t be disappointed!

Whole Wheat Apple Pie Waffles
Ingredients
Waffles
- 3/4 c. Grape-Nuts cereal
- 1 1/2 c. whole wheat flour
- 2 tbsp. coconut palm sugar
- 1 tbsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 1 3/4 c. milk of choice I used whole milk
- 2 eggs lightly beaten
Sweetened Maple Cream
- 1/2 c. cream cheese softened
- 4 tbsp. pure maple syrup
- 1 tsp. vanilla
Toppings
- 1 medium apple sliced
- Chopped Pecans
- Pure maple syrup
- Powdered sugar optional
Instructions

In a blender or food processor, process Grape-Nuts until ground into a flour like consistency.

In a large bowl, combine ground cereal, flour, coconut palm sugar, baking powder, baking soda, cinnamon and salt. Add milk and eggs and stir until smooth. Let batter rest 5 minutes before using.

Preheat waffle iron to medium heat. Pour batter into the center of the lower grid. Close lid of waffle iron and cook for 3 1/2-4 minutes or until golden brown. Open lid carefully and remove baked waffle. Repeat with remaining batter.

Spoon Sweetened Maple Cream in to a ziplock baggie & with scissors snip a small corner. Drizzle over waffle and top with apple slices, pecans, and syrup. Dust with powdered sugar if desired. Serve immediately.

My mom use to eat grape nuts when I was little so these take me back! I would have never thought to add them to my waffles but now I am intrigued! They sound so perfect to welcome fall with!

We make a lot (and I mean A LOT) of waffles at our house and we always stick with whole wheat ones. So…that means that I need to add these beautiful waffles to our rotation.
