Ingredients

Waffles

  • 3/4 c. Grape-Nuts cereal
  • 1 1/2 c. whole wheat flour
  • 2 tbsp. coconut palm sugar
  • 1 tbsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 3/4 c. milk of choice I used whole milk
  • 2 eggs lightly beaten

Sweetened Maple Cream

  • 1/2 c. cream cheese softened
  • 4 tbsp. pure maple syrup
  • 1 tsp. vanilla

Toppings

  • 1 medium apple sliced
  • Chopped Pecans
  • Pure maple syrup
  • Powdered sugar optional

Instructions

  1. In a blender or food processor, process Grape-Nuts until ground into a flour like consistency.

  2. In a large bowl, combine ground cereal, flour, coconut palm sugar, baking powder, baking soda, cinnamon and salt. Add milk and eggs and stir until smooth. Let batter rest 5 minutes before using.

  3. Preheat waffle iron to medium heat. Pour batter into the center of the lower grid. Close lid of waffle iron and cook for 3 1/2-4 minutes or until golden brown. Open lid carefully and remove baked waffle. Repeat with remaining batter.

  4.  Spoon Sweetened Maple Cream in to a ziplock baggie & with scissors snip a small corner. Drizzle over waffle and top with apple slices, pecans, and syrup. Dust with powdered sugar if desired. Serve immediately.

These were great! I got 8 waffles out of my square waffle iron. They stuck to the pan a bit, but the taste was amazing. Thank you!!

I love certain foods that bring back memories like that. I hadn’t thought to add them to waffles either, but man – they were absolutely perfect! Thanks Meg!

We make a lot (and I mean A LOT) of waffles at our house and we always stick with whole wheat ones. So…that means that I need to add these beautiful waffles to our rotation.
