A full bed of luscious spring greens. Crunchy sugar-crusted nuts. A perfectly tart vinaigrette. Heaven in a bowl. Have I piqued your interest yet? I know what you’re thinking, this is just another one of those popular berry salads. Well, it may be. What I love about my dressing is there is no refined sugar. It’s honey-sweetened!

The best part about this salad is how versatile it can be. Don’t like strawberries? No problem. Take them out and add extra raspberries. Don’t like almonds? No problem. Pecans and walnuts work just as well (if not even better depending on your taste). I struggle with raspberry seeds. My trick is to blend the heck out of the dressing the pulverize the seeds in to non-existence. With my Blendtec I can do that. Works like a charm! So. If you want the taste of summer, then you’ve got to make this salad. You won’t regret it.

This Very Berry Salad with Honey Sweetened Raspberry Vinaigrette is the perfect way to welcome summer. All of your favorite berries on top of a bed of greens sprinkled with feta cheese and candied almonds. Drizzled with a fantastic vinaigrette.

Ingredients

For the salad

  • 4 c. spring lettuce mix
  • 1 c. fresh blueberries
  • 1 c. fresh strawberries quartered
  • 1 c. fresh raspberries
  • 1/4 c. feta cheese

For the candied almonds

  • 1/2 c. sliced almonds
  • 1/2-1 tbsp. sugar white or brown

For the vinaigrette

  • 2 c. fresh raspberries
  • 1/4 c. red wine vinegar
  • 1/4 c. extra-virgin olive oil
  • 1/4 c. fresh lemon juice
  • 3 tbsp. honey

Instructions

  1. In a large bowl, pile your greens and top with all of your berries and sprinkle with feta. Set aside while you prepare your candied almonds.

  2. In a small saucepan add your almonds and sugar and stir constantly heating to medium-high.

  3. Sugar will begin to melt after about 5-7 minutes. Do not stop stirring your nuts. Once the sugar begins to melt it will harden quickly. Stir briskly to evenly coat the almonds. When all of the sugar is dissolved, remove from heat. Transfer almonds to a paper towel to cool.

  4. Sprinkle cooled almonds over top of salad greens, berries and cheese.

  5. Prepare your dressing by adding all ingredients to your blender. Blend on high until a smooth consistency is achieved.

  6. Drizzle desired amount of dressing over salad. Enjoy.
