YUM! // Tried and TastyHere’s the thing. It’s no secret that I’m mildly {or wildly} obsessed with the color green. I pretty much go crazy any time I see the color green and wish for it immediately. I’ve been brainstorming ideas for a yummy St. Patrick’s Day menu minus artificial food coloring (I even managed to pull that off in my Mint Chocolate Chia Seed Pudding!). It’s totally possible. This green salad would be fantastic to have as a starter OR even as your main dish. Plus how gorgeous is it anyway?

I’m a huge salad fan. I’ve been eager to get more ‘chopped’ salads in to my salad recipe reserves. This was super simple to throw together: wash veggies. chop veggies. drizzle veggies with insanely delicious dressing. chow down. Yep. That’s about it. We’ll go ahead and throw this in to the ’30 minutes or less’ category. Think the apples & pears are an odd addition? Think again. They take this green salad to the next level! So what are you waiting for? You don’t need to wait till St. Patty’s to have this yumminess. Have it right away! Then come back and tell me what you think!

You've had a green salad before, but have you had The Ultimate Green Salad?!? These flavors come together to make a delicious explosion in your mouth. Perfect for St. Patrick's Day or any other day!

Ingredients

Salad

  • 4 c. spinach
  • 1 cucumber chopped
  • 2 large green apples chopped
  • 2 pears chopped
  • 1 large green bell pepper chopped
  • 1 head broccoli chopped

Tomatillo Salad dressing

  • 1 1/3 c. sour cream
  • 1/2 bunch cilantro
  • 1 pkg. ranch dressing mix
  • 4 tbsp. salsa Verde green salsa
  • 2 cloves garlic minced
  • Juice of 1 lime

Instructions

  1. Top spinach with cucumber, apples, pears, bell pepper and broccoli. Prepare your dressing: Mix together in a blender. Top salad with dressing & enjoy!
