I mentioned in my Hot Italian Sandwich post the other day how I fell in love with Boar’s Head meat and cheese recently. Let me just tell you, there are times in life when you fall in love, and there are times in life when you fall in loooovvveee! I have seriously fallen head over heels for this brand and company. When I bought the meat for the Itailian sandwiches I also picked up a few other selections that sounded tasty. One of which was this Blackened Oven Roasted Turkey Breast. The hubs and I love turkey sandwiches, but I’m trying to lower the amount of breads in my diet. So what’s the next best way to enjoy it? On a salad of course!
Salads are one of the most versatile meals on earth. Basically, you round up all your favorite toppings, throw them on a bed of greens, drizzle on your favorite dressing and you are good to go. In all honesty, I kinda sorta accidentally made this really amazing salad. I was pressed for time on my lunch hour, opened the fridge and immediately saw the sliced turkey. As I quickly scanned everything else we had I started pulling out what I thought would taste great together. Boom. This salad was born. A couple of quick chops and dices and I was on my way. I enjoyed this with ranch dressing, but you can have whatever your fav happens to be!
Turkey, Cheese & Tomato Spinach Salad
This Turkey, Cheese & Tomato Spinach Salad is a quick & easy salad that is thrown together in no time!
Ingredients
- 2 c. baby spinach washed
- 1/4 c. cheddar cheese shredded
- 1/4 c. mozzarella cheese shredded
- 1/2 tomato diced
- 2 slices Boar's Head Blackened Oven Roasted Turkey Breast diced
Instructions

On the bed of your greens, layer remaining ingredients. Serve with your favorite salad dressing.
