I’ve had this recipe up my sleeves for quite sometime. In fact, I actually have taken these pictures twice. Yep. Twice. I committed the cardinal sin of deleting my memory card from my camera BEFORE checking to make sure I had downloaded all of the pictures. When I went to edit these photos and realized I had deleted these pictures I was so sad. BUT not too sad, because this meal is so fantastic and we have it quite often I knew that I would have the opportunity to take them again. Just ever so slightly annoying you know? Anywhoo, here we are and now this fabulous recipe is in your hands. If you’re an asparagus fan like myself you will totally love this. Asparagus is one of my very favorite vegetables and it’s definitely the star in this dish.
I first learned of this awesome meal last summer when my friend and I were doing a recipe swap. However, we weren’t just swapping recipe cards. What we would do is when we made something healthy and delicious we would save a little bit of the leftovers for the other to try. She would make yummy things for me to try and I would make tasty things for her to try. This was one of my favorite recipes she shared with me (the other is this Italian Skinny Beef + Peppers that is phenomenal… and also these PF Chang’s Chicken Lettuce Wraps… this is a knockout recipe!). Talk about a fun way to try new recipes! I highly recommend if you have a good friend who likes healthy cooking this is a great way to get to try some things you probably wouldn’t otherwise. Then you can add them into your rotation as you like. That’s exactly what happened with this Turkey & Asparagus Stir Fry. What we like to do is serve this overtop some basmati rice for the perfect meal. I hope you enjoy it as much as we do!

Turkey & Asparagus Stir Fry
This Turkey & Asparagus Stir Fry is a healthy & hearty dinner the whole family will love! This is this twist on traditional stir fry will have your family begging for seconds. Chock full of delicious veggies, serve over rice for an extra tasty meal!
Ingredients
- 28 oz lean ground turkey
- 2 tbsp. sesame oil
- 1 c. celery chopped
- 2 c. asparagus cut into 1 in. pieces
- 1 med. onions chopped
- 6 cloves garlic
- 1/3 c. liquid amino acid could substitute soy sauce
- 2 tbsp organic raw coconut crystals
- 2 1/2 tsp. ginger powder
- 1 tbsp. arrowroot starch could substitute cornstarch
- 1/4 tsp. crushed red pepper flakes
Instructions

Heat a large deep skillet over medium-high heat. Add ground turkey and stir until browned and cooked through; transfer to a bowl with a slotted spoon. Drain excess fat from pan.

Add sesame oil, celery, onion and garlic to skillet. Cook until vegetables have softened and onion is translucent. Return ground turkey to the pan.

Add asparagus. Lower temperature to medium-low.

In a small saucepan, stir together liquid aminos (or soy sauce), coconut crystals, and ginger powder. Heat until boiling.

In a separate small bowl stir together arrowroot powder with 1 tbsp. cold water until blended; stir into liquid aminos mixture and whisk constantly until it begins to thicken. Immediately transfer to ground turkey and vegetables and coat evenly.

Sprinkle with crushed red pepper flakes. Serve stir fry over your favorite rice.

I love this recipe. I didn’t have your coconut crystals so I added a can of coconut milk. Now I see coconut crystals are sugar, whoops! The addition of coconut milk is great though! I’ve made a handful of times and my kids just eat it up. Thanks for the recipe!
