I’ve been trying to get this recipe out to you all week. As you know (or may not know) I have been doing the 30-Day Green Smoothie Challenge from Simple Green Smoothies and things are going well. We’ve had a smoothie every day so far and after buying more greens from Costco today in fact – I see us holding strong! I will say however it’s getting tough trying to mix things up. Coming up with 30 new smoothies isn’t easy (when I’m trying to come up with them off the top of my head, and not refer to a cookbook or the internet). Not that you have to, because the challenge doesn’t require you to. Anyhoo, I was pretty stoked to come up with this creation. Everyone loves strawberry lemonade right?
I will say the color leaves little to be desired. For sure. I get that. But 99% of green smoothies aren’t aesthetically pleasing. The lemon in this smoothie packs the perfect zing that you won’t care what color it is, you’ll just wonder when you’re next sip is! I threw the lemon in whole (peeled) and then realized that it’s possibly better if you juice the lemon separately. Or it could be identical either way. My preference is frozen fruit, but we only had fresh strawberries – either work great, I just love my smoothies extra cold! We’re a third of the way into the month how are you doing on your goals? Did you make goals or resolutions?
