I picked this recipe up from a grocery store down in St. George this spring. There was a wall of random recipes and a few of them caught my eye. I love mashed potatoes and I’ve never been great at making them. In my family, my grandmother on my dad’s side makes a mean mashed potato and she’s well known for it. I thought I would use her technique with these – but still it didn’t work out for me! I blended them with a hand mixer (as she does) and I think because there were so many creamy ingredients it wouldn’t be the best route, because they ended up looking like potato soup than mashed potatoes. They were definitely delicious, but next time I will hand mash them! Steve doesn’t even like mashed potatoes and he went back for seconds I love when that happens!
- 6-8 large potatoes, peeled and cubed
- 1 tub (16 oz.) sour cream
- 1/2 c. butter, melted
- 1 pkg. (8 oz.) cream cheese
- 2 c. grated cheese
- Salt and pepper, to taste
- Boil potatoes until soft, drain water and put into a large bowl. Mash until desired consistency and add in sour cream, cream cheese, butter, cheese and salt and pepper. Stir together until well mixed. Serve warm and enjoy.

- Only boil the potatoes until slightly tender. That way they will hold up better in the mashing process and not become too mushy.
