Sweet potatoes have become a staple in our house over the last few months. We normally stick to just baked sweet potatoes and sweet potato fries. Once I made mashed sweet potatoes that were delicious and of course over the holidays we enjoyed a sweet version of a sweet potato casserole. They are really healthy and good for you (high in fiber, heart healthy, rich in beta carotene, vitamin C & E), and oddly enough aren’t even related to white potatoes (that hold little to no nutritional value at all). When I stumbled upon this recipe my husband wanted to make it immediately. We tried it and loved it! The best part about it was how easy it is to make. Our Blendtec did all the work and in the end we were left with a velvety smooth delicious and healthy dinner!
Simple Sweet Potato Soup
This Simple Sweet Potato Soup is oh so comforting and delicious! It has just a handful of ingredients and truly is so simple to prepare.
Ingredients
- 2 med sweet potatoes
- 1 c chicken broth*
- 1 c almond milk or whole milk if preferred
- 1-2 tsp. salt to taste, add more or less if desired
- 1/2 tsp chipotle powder
Garnish if desired
- 1/4 cup diced avocado
- 2-3 crushed tortilla chips
Instructions

Preheat oven to 400 F. Bake your sweet potato until tender. Remove potato skin, add to blender along with the broth and milk of choice.

Blend on low until smooth. Add the salt and spices to taste. Serve with garnish or avocado and crushed chips over top.

Depending on which chicken broth you use, it could be loaded with lots of unnecessary ingredients. While on our juice fast and even right after, my husband and I scoured our cabinets and pantry and trashed anything with icky ingredients (MSG and high fructose corn syrup are a no no in our house). One of the things we got rid of were our chicken bullion cubes. I found a great substitute for the more popular brand at my local Target: Orrington Farms Broth Base & Seasoning Chicken Flavored. We've used it in a couple of recipes already and I'm extremely happy with it! -OR- if you prefer to make this a Vegan dish, you can always use a substitute vegetable broth.
