
Salmon is one of the easiest fish to prepare. Normally, I would prefer to grill my filet, but since we are in the dead of winter I decided to oven bake it instead. I just placed my fish on a lightly greased sheet of aluminum foil, seasoned with salt and pepper, and baked at 450 for 12-15 minutes. The end result was beautiful! So moist and tender. Next to grilling, I’d definitely say that would be my second most favorite way to prepare salmon. I love the idea of the lettuce wrap because as much as I love me a good croissant – it’s sure nice to cut the carbs! Give this a try next time you’ve got some leftover salmon. It’s fantastic!

Salmon & Avocado Stuffed Lettuce Wraps
Salmon & Avocado Stuffed Lettuce Wraps is a wonderful way to use leftover salmon that is quick, easy, & healthy!
Ingredients
- 1 cooked salmon filet chilled
- 1-2 tbsp. finely chopped onion
- 1/2 tbsp. fresh dill
- 2 tbsp. greek yogurt
- 1 tsp. fresh lemon juice
- 1 ripe avocado
- 2 lettuce leaves
Instructions

Flake salmon filet in to a medium bowl. Mix together with onion, dill, yogurt, & lemon juice. Slice avocado & place 1/2 in each lettuce leaf. Top with salmon mixture. Salt & pepper to taste.
