Salmon & Avocado Stuffed Lettuce Wraps // A wonderful way to use leftover salmon that is quick, easy, & healthy! | Tried and TastyIt’s the new year! Is one of your resolutions to be healthy? I’m excited to bring you fantastic healthy recipes that are not only delicious, but also easy! I don’t know about you, but time is something I always seem to be running short of and if I can save a little bit of hassle in the kitchen I am all over it! My Healthy Cashew Chicken Salad Lettuce Wraps from last year are one of my most favorite recipes. I decided to give it a little twist and try salmon instead of chicken. I’m a huge seafood fan and anytime I can incorporate it into a lunch or dinner I’m all for it!

Salmon is one of the easiest fish to prepare. Normally, I would prefer to grill my filet, but since we are in the dead of winter I decided to oven bake it instead. I just placed my fish on a lightly greased sheet of aluminum foil, seasoned with salt and pepper, and baked at 450 for 12-15 minutes. The end result was beautiful! So moist and tender. Next to grilling, I’d definitely say that would be my second most favorite way to prepare salmon. I love the idea of the lettuce wrap because as much as I love me a good croissant – it’s sure nice to cut the carbs! Give this a try next time you’ve got some leftover salmon. It’s fantastic!
