When I opened the fridge and saw the tortillas, beans, and cheese I immediately ran to my pantry for avocados. A great quesadilla jumped right out at me and on my quick lunch break I had a tasty meal ready in less than 30 minutes. You can’t beat that! This is also one of those great meals that even the little kiddos will love. You hardly need a recipe, but I’ll give ya one anyway!
Quick & Easy Black Bean, Cheese & Chicken Quesadilla
- Cooked rotisserie chicken, shredded
- Black beans
- Cheddar cheese, shredded
- Corn tortillas
- Heat medium-sized sauce pan on medium-high. Lightly spray with cooking spray. Add tortilla and layer with cheese, chicken & beans followed by another layer of cheese. Top with another tortilla. Cook on each side 2-3 minutes until melted and heated throughout. Serve with pico de gallo, mashed avocado, and sour cream.
