A refreshing twist to shake things up this fall season! | Tried and TastyI’ve posted all the sweet things, so it was time to throw in a savory. I wasn’t 100% sure how I’d like a savory pasta. So I gave it a whirl, and loved it! It was super simple to throw together and I had all of the ingredients on hand – which always makes it nice when you don’t have to make a special trip to the store for fancy ingredients you normally don’t have. The heavy cream has been a staple in the fridge due to all the fresh whipped cream I’ve been making for my No Bake Pumpkin Cheesecake Icebox Cake, No Bake Pumpkin Cheesecake Parfait, and my Pumpkin Cheesecake with Pecan-Gingersnap Crust

Hopefully you’ll at least give this recipe a try, I can’t guarantee you will like it, but if you like all things pumpkin – I’m betting you probably will enjoy it! I certainly did, and topped with fresh grated parmesan, you can’t go wrong!

This Pumpkin Pasta Alfredo will surprise your tastebuds.  This is the savory side of pumpkin, and a refreshing twist to shake things up this fall season!

Ingredients

  • 2 c. uncooked penne noodles
  • 1 c. pumpkin puree
  • 1 c. heavy cream
  • 1 tbsp. butter
  • 2 garlic cloves
  • 2 tbsp. fresh grated parmesan
  • Salt & pepper to taste

Instructions

  1. Prepare noodles according to package directions. 

  2. In a medium saucepan saute butter and garlic together until fragrant; about a minute. Add pumpkin puree, cream and salt and pepper. Heat on medium-high just until boiling.

  3. Set aside. Mix together sauce and noodles, serve with freshly grated parmesan.
