Helllooooooo green smoothie! I had a little too much fun in the kitchen with this one. I was surfing Instagram sometime last week when I saw that Monique of Ambitious Kitchen went to a place called the Harvest Juicery (she lives in Chicago) and was sipping on a Hearty Pistachio Smoothie. She then proceeded to list off all of the yummy ingredients inside. Stop the presses. Everything she mentioned sounded absolutely divine and even better all blended together in a yummy green smoothie. So while I’ve never tasted the one from the Harvest Juicery I used the ingredients as a jump board and paved my own way. Never heard of pistachio milk? No problem! Neither had I. So I just googled ‘how to make pistachio milk‘ and learned just how easy peasy it is. I’ve made my own Homemade Coconut Milk and posted a series on ‘How To Make Your Own Flour & Nut Milk‘ so I was pretty familiar with the process.
I know everyone has their favorite blender. I get that. But man alive do I love my Blendtec. No they aren’t sponsoring this post, I just have to pass along the greatness of this machine. I used my Mini Wildside Jar for this smoothie for two and in less than a minute I had the smoothest most delicious and creamy smoothie to sip on. If you don’t have a Blendtec you MUST try to get your hands on one. Hands down one of my favorite appliances in the kitchen (and one that is used daily). Back to this smoothie. This is unlike any other recipe that I have… and I have a bunch. Including: The Beginners Green Smoothie, Tropical Green Smoothie, Pineapple Coconut Green Smoothie, Three Ingredient Pineapple Green Smoothie, Banana Orange Green Smoothie, Strawberry Lemonade Green Smoothie, and my Pineapple Banana Layered Green Smoothie. Phew. That’s some hefty list. Basically what I’m saying is that if you’re looking to get your greens on (which happens to be my FAVORITE color) then look no further! I’ve got you covered. Boom.
Items used in this post:
Pistachio Green Smoothie
- 1 c. pistachio milk
- 1/2 c. spinach
- 1/2 c. chopped romaine lettuce
- 1/2 c. green apple, chopped
- 1/2 fresh squeezed lime
- 1/2 avocado
- 1 small handful fresh mint
- 1 c. ice
- Add all ingredients to your blender and blend until smooth.
- Pistachio milk is simple to make, I followed the instructions here: http://www.wholefoodsmarket.com/recipe/homemade-pistachio-milk. My suggestion would be to make in advance and refrigerate before making smoothie to have a chilled smoothie rather than room temperature.
