It was an attempt to cook healthier in hopes to be healthier. While the recipes are fantastic, nothing beats just how easy this recipe is. I’ve been counting my calories daily for just over three months now and this pizza has become a staple. Weighing in at 360 calories (for the pepperoni version) it’s the perfect lunch or dinner. I have this probably 4-5 times a week. It’s so yummy! It’s the perfect size and fills me up just right. It’s so easy it would be a fun dinner to let the kids help with. Topping choices are endless and everyone can personalize their pizza just the way they want it. Start to finish you are looking at a meal that can be thrown together in less than 20 minutes. That’s my kind of cooking 🙂

Ingredients
  1. 1 Whole Wheat Pita Pocket Bread (we use the Kangaroo brand found at WalMart, only 90 cal per 1/2 pocket)
  2. 1/4 c. pizza sauce
  3. 1/4 c. mozzarella, shredded
Toppings of your choice
  1. 5-10 slices of Canadian bacon
  2. 10-15 chunks pineapple
  3. -or-
  4. 25-30 mini pepperoni slices
  5. sliced olives
  6. chopped mushrooms
  7. diced green pepper
  8. diced onion
Instructions
  1. Preheat oven to high broil. Line cookie sheet with aluminum foil; spray with Pam. Place desired number of pitas. Cover with sauce. Top with cheese, followed by preferred toppings. Broil on high for 10 minutes.
Notes
  1. [My 2 Cents]
  2. We have found the pitas at Wal-Mart and Target. They come in white and wheat, the wheat is obviously better for you. The pepperoni's we use for this are found with the deli meats along with regular pepperoni. They are made specifically for pasta salad. They are a bit more expensive, however they come perfectly packaged in 140 calorie packs - and for the pizza I only use half a pack per pizza (70 calories). So they last a while and are definitely worth the money. Otherwise, I would recommend Turkey Pepperoni, it comes in at half (or more) the calories of regular pepperoni.
