FAQ’s and Fun Facts

I recently asked my Facebook fans and Twitter following if they had any questions for me, and I got a few fun questions that I’m excited to answer!

Q. What is your favorite quick snack?
A. Snacks are important in my calorie counting. I try to have a mid-morning and mid-afternoon snack each day to not only help keep my metabolism moving, but also to help curb my appetite until my next meal. If I go too long between meals I have a tendency to overeat (which is never good). Thankfully we don’t keep junk food or processed snacks in our house, so I don’t have the temptation to scarf an entire box of crackers or cookies. So – to answer the question, my favorite quick snack would probably either be apples and peanut butter (check out my Get Healthy in 2014: Kitchen Basics Part II post for my favorite peanut butter) or Easy Toss & Bake Granola and yogurt. Both are awesome healthy snacks!

Q. What is your favorite flavor combination?
A. Oooh that’s a toughie. There really isn’t much that I don’t like, so to narrow it down to my favorite is nearly impossible. Like many, I’m always a huge fan of the sweet and salty combo.

Q. What is your favorite holiday?
A. I think this is a three-way tie for me: my birthday, Thanksgiving, and Christmas. Ha! Can my birthday be considered a holiday? You bet it can! I absolutely love my special day and have for as long as I can remember. I also love Thanksgiving and the season of gratitude that sweeps over the crisp time of year. The food is definitely a perk, if you missed it, you’ll definitely want to check out A Tried and Tasty Thanksgiving from 2013 that was an insane amount of work but incredibly delicious! I didn’t grow up with many traditions but several of the few that I do have revolve around Christmas and for many reasons that will forever be a special holiday to me.

Q. What is your favorite holiday to cook for?
A. I actually haven’t really been much of a “theme” kind of cook until recently. For the longest time I’ve loved {being cooked for} on holidays rather than being the one doing the cooking. As I’m getting older I’m finding that those days are getting fewer and fewer in between and I’m coming in to the time of my life where I’m the one that is doing the cooking for others (which of course I love to do). I really like Valentine’s dinners and desserts and I also like New Year’s Eve too! Lots of fun things for each of those holidays.

Q. What is your favorite winter comfort food to make?
A. I love, love, love shepherd’s pie. When I decided last fall to switch things up and make a sweet potato variation it knocked my socks off! It is absolutely my favorite comfort food for sure. You’ll definitely want to check out my Healthy Sweet Potato Shepherd’s Pie and add it to your upcoming dinner menu. You won’t regret it. Trust me.

Q. Where do you want to live permanently when you ‘settle down’?
A. This is a great question! I have been dreaming for a lot of years of the place I’d love to settle one day. When I was younger, I used to visit my aunt summer after summer in Nevada (for some years Reno, and for some years Las Vegas). She lived on a farm and that’s where my love of farm-life was born.  I absolutely LOVE country life. I dream to one day have a little chunk of land (our tiny piece of heaven), some animals, an unbelievable garden, and a place where someday our children will grow up appreciating the outdoors, fresh air, and value hard work. Doesn’t that sound amazing? I sure do think so.

Here are a few fun facts about me:

I get nervous cooking or baking for others.
As much as I love cooking, and especially cooking for others, without fail I get nervous every single time. No matter what I’m cooking. It could be one of my most tried and true recipes and I will always get butterflies. The highest form of flattery is when my guests, company, or family go back for seconds. I love being able to share my joy of cooking and only want to make the best for those I feed.

I would love to one day be an event planner.
I love planning parties and events. I’ve even had the pleasure of being a wedding coordinator for a close friends wedding. It was an amazing opportunity and I loved every second of it. I love little details, lists, shopping (of course), and a little bit of researching. Shortly after high school I contemplated for a brief moment moving out of state with a friend who was starting an event planning business. It wasn’t the right time, but maybe somewhere in my future the stars will align for another one of my passions.

My absolute most favorite way to vacation is on a cruise boat. I’ve been on six cruises (two of which with Steve) and my seventh is planned for Winter 2014. I’ve been to the Caribbean several times (Eastern and Western), Mexico, and Alaska. Steve proposed to me the night before I was leaving on the 7-night Alaskan cruise back in 2008. With a couple of extra days spent in Seattle it was nearly torture being apart from him for just over a week! As much as I loved that vacation, I sure couldn’t wait to get back home to him!

Favorite band. Favorite T.V. Series. Favorite Color.
I have got some mad love for my boys Rascal Flatts that dates all the way back to…oh goodness. I don’t even remember. Shortly after they became stars I’m sure. I’ve seen them many times and most recently was lucky enough to get center stage third row tickets (courtesy of the fan club!) and it was incredible. I remember one of the early concerts my friends and I went to was with Toby Keith and I mistakenly thought that he was opening for them – ha! Isn’t that funny? I absolutely love them and many memories are held within their songs for me. Lots of great times! Oooh my favorite t.v. series is One Tree Hill. Right? I know. I fell in love with it the day the pilot aired and have loved it ever since. I own all of the seasons (of course), all of the soundtracks, I bought podcasts (when those were big), follow their fan page, and even drove to Park City the night they were filming there and took pictures with several of the cast members. Dream. Come. True. Believe that will go down in history as one of my absolute favorite memories ever. It doesn’t take much to guess my favorite color. Green is my jam. I’m borderline obsessed with it, and when given the option I will always chose green. It’s just me.
