I have been SO excited to celebrate this day with you. I mean, what’s better than caramel? With ice cream? In a waffle cone? Not much! I’ve been eager to make homemade ice cream for a while now, especially to use my Cuisinart Frozen Yogurt-Ice Cream & Sorbet Maker that I happen to have in the most adorable Key Lime color! The sweet friend that gave it to me as a gift a couple of years ago happens to know that green is my FAVORITE color! 

I’m teaming up with my blogging friends this month for a great collection of fabulous caramel recipes. I couldn’t wait to incorporate a caramel date layer in to something for the special occasion and this coconut ice cream was absolutely perfect! First off, I have categorized this recipe in the ‘healthy’ category – however, that is only because it doesn’t contain any refined sugar whatsoever! The ingredient list is 100% guilt free and nothing short of amazing. I’ll also fill you in on a little secret, those waffle cones you see, I made those! Want to know what else? Ingredients

Coconut Ice Cream

  • 1 1/2 c. raw cashews soaked 4-6 hours up to overnight, then drained
  • 1 15-oz can full fat unsweetened coconut milk
  • 3 tbsp. coconut oil melted
  • 1/2 c. pure maple syrup
  • 1 tsp. vanilla bean paste
  • 1/4 tsp. sea salt

Salted Caramel

  • 14 dates pitted
  • 1/2 tsp. sea salt
  • 4-5 tbsp. water for thinning

Add Ins

  • 1/2 c. salted cashews chopped
  • 1/4 c. toasted coconut flakes

Instructions

  1. Add soaked, drained cashews, coconut milk, coconut oil, maple syrup, vanilla bean paste and sea salt to a high speed blender. Blend until completely creamy and smooth (this may take a couple of cycles), scraping down sides as needed.    

  2. For best texture, chill creamed mixture for at least 4-6 hours or overnight.

  3. Add chilled mixture and mix-ins to ice cream maker and churn according to manufacturer’s instructions. It should look like soft serve. 

  4. Prepare salted caramel by adding dates, salt, and water to a food processor or blender. Blend until creamy and smooth, adding an additional tbsp. of water as needed.

  5. Once ice cream has churned, transfer to a large freezer-safe container and spoon in desired amount of caramel. Use a spoon or knife to swirl. Smooth top and cover first with a layer of saran wrap, then a layer of aluminum foil.

  6. Freeze for at least 4-6 hours or until firm. Good for up to 1 week, although best when fresh.

Recipe Notes

Day before prep: place your ice cream churning bowl in the freezer to properly chill & soak your cashews overnight or next day for at least 6 hours.

    Just a quick question. Can I replace the cashews with raw Macadamia or raw Almonds?? I’ve done this in other recipes (vegan cheesecake, vegan bars, etc.) but not sure what would happen with doing this in an ice cream recipe. If I can’t replace the cashews, can I just omit them and do everything else the same?

      You know, unfortunately this isn’t a no churn recipe, so I’m not sure you can make it without an ice cream maker.
