Next to my Mom’s Best Potato Salad, I love my Mom’s Best Macaroni Salad *almost* just as much! I cannot wait to have this more often this summer. Now that I’ve got mom’s recipe I can have a little piece of home here with me anytime I want (see previous post for insight as to my world changing with my parents moving). So glad my mom and I were able to cook together before the big move. I didn’t realize how many recipes of hers that I wanted but didn’t have written down anywhere. I’m a huge macaroni salad fan and this is the perfect compliment to any BBQ meal. It’s creamy, tangy, and perfect in every way. Very similar to the potato salad recipe, just a little bit of a pasta twist.
My idea of a good macaroni is one that is perfectly creamy, not too tangy (just the right amount of tang) and a little bit of sweet with the pickle relish. Mmm.. just typing about it I can taste it! This is another one of those things that I don’t like the store bought variety. If I’m going to eat it, it’s going to be homemade. For whatever reason the store bought versions have a weird aftertaste to me. Do you enjoy macaroni salad at your picnics and BBQ’s? Mom’s Best Macaroni Salad
Mom's Best Macaroni Salad is a creamy, tangy but not too tangy macaroni salad that will compliment any picnic or BBQ!
Ingredients
- 2 c. uncooked elbow macaroni
- 1/2 c. miracle whip
- 1/3 c. real mayo
- 1/2 c. pickle relish sweet or dill to preference
- 1 tbsp. pimentos
- 1 tbsp. chopped olives
- Salt & pepper to taste
Instructions

Cook macaroni according to package directions.

Drain; set aside to cool.

Stir in remaining ingredients and mix until all are fully incorporated.

Refrigerate until ready to serve.
