On Sunday I brought you 35+ Mint Madness Chocolate & Mint Recipes in preparation for today. Do you know what today is?! National Chocolate Mint Day! Who even knew there was such a day? Last month for National Peanut Butter Day I made for you my Copycat Jamba Juice Chocolate Peanut Butter Moo’d Smoothie. I’ve teamed up with my blogging buddies once more this month to bring you all things chocolate mint! We’ve made for you ten different recipes to help you celebrate.
I have a mild obsession with chia seed puddings if you haven’t noticed. It all started with my Fruit-On-The Bottom Chia Seed Pudding and my collection is quickly expanding {haha, get it..chia seeds expand when combined with any sort of liquid!} from there. I then brought you my Strawberry Coconut Chia Seed Pudding and then Pomegranate Coconut Chia Pudding. I knew this would be the perfect way to enjoy your chocolate and mint without any guilt whatsoever. Guilt-free recipes are easily becoming my favorite recipes to make! Not only does this fantastic recipe that I have for you today not have ANY refined sugars, it also is made without ANY artificial food dye: BONUS! This is a must make in my book, I hope you’ll give it a try!
Mint Chocolate Chia Seed Pudding
For the chocolate and mint lovers, you will die over how delicious this healthy Mint Chocolate Chia Seed Pudding is! Guilty free, simple, tasty, and prepared in only a matter of minutes? What more could you ask for! So healthy you could even enjoy for breakfast!
Ingredients
Pudding
- 1 1/2 c. 12 oz. plain Greek yogurt
- 1/2 c. full fat coconut milk
- 3 tbsp. honey
- 3 tbsp. raw organic cacao powder can substitute unsweetened cocoa powder
- 4 tbsp. chia seeds
Mint Coconut Whipped Cream
- 1 13.66 oz can unsweetened full fat coconut milk, chilled
- 1/4 tsp. mint extract
- 1/2 tsp. matcha green tea powder to color
Instructions

In a large bowl, mix together Greek yogurt, coconut milk, and honey. Stir until well combined. Add cacoa powder and chia seeds and mix well once more. Cover with plastic wrap. and refrigerate for 1 hour, or until set.

In a separate bowl, remove the thick white cream of the chilled coconut milk only; reserve liquid coconut milk for smoothie or other recipe.

Add mint extract and matcha powder to thick cream. Using a hand mixer, whip coconut cream on high for 3-5 minutes or until cream forms a 'whipped cream' consistency.

Layer pudding with mint whipped cream followed by another layer of pudding. Keep refrigerated until ready to serve.
