Happy St. Patrick’s Day! One of my favorite days of the year. Why? Not because I’ve got Irish blood in me {because I don’t}, not because of the corned beef and cabbage {which would be a great reason}, not because I like leprechauns {although they are pretty cute}, but because it’s the day that is all about GREEN! Could I ask for anything more? A holiday centered around my favorite color. Wahoo! I wanted to bring you one last [not making any promises] green recipe for your special day.
I know there are all sorts of fun drinks and punch for this special holiday and they all have artificial food coloring, soda, sherbet, or ice cream. I wanted to provide an option that doesn’t have ANY of those! This recipe doesn’t even have any refined sugars in it. Could you ASK for anything more healthy? Between this and my Minty Lime Water {a.k.a. Virgin No Sugar Added Mojito} I don’t know which is better. Both are fantastic refreshing and delicious options. Make both and you decide which is better!
Kiwi Cucumber Aguar Fresca
Ingredients
- 6 kiwis peeled
- 1 large cucumber peeled and seeded (I used an english cucumber, so I didn't need to deseed)
- 4 cups water
- 1 tbsp. honey more if desired
- Extra kiwi slices for garnish optional
Instructions

Add all ingredients to your blender. Blend for 30 seconds. Pour juice through a strainer to remove excess seeds & pulp. Serve cold or over ice. Enjoy!

Very good and refreshing agua fresca. Will make again. Used 2 very ripe peeled kiwis and one peeled cucumber. Blended in Vitamix with 1/2 cup sugar and water. Enough to fill a 2 Liter pitcher. Put in freezer for about 30 minutes to cool and served over ice.
