Last year for whatever reason I absolutely loved my summer. I loved every minute if it. For the first time that I can even remember the moment that fall rolled around I had the hardest time letting go of the hot weather, picnics, camping trips, BBQ’s, gardening, and all things that scream SUMMER! I’m already prepared this year to enjoy every day. No matter how hot. Because I know in a flash it will be over before I know it. One of my favorite things about last summer was our garden. I challenged myself to use all of our zucchini (we planted WAY too many plants) and create a new recipe for each harvest. It started with my No Really, It’s Healthy Zucchini Bread, then my Stuffed Zucchini with Tomatoes and Mozzarella, Zucchini & Yellow Squash Gratin, Veggie Lovers Stuffed Zucchini, Roasted Veggie Medley, Healthy Chocolate Zucchini Muffins, AND my Chocolate Zucchini Cake with Cream Cheese Frosting. Phew! All delicious! ALL worth trying!
This year, next to the garden I already have a feeling that the grill will be one of my passions! You’ve already seen burger week at the beginning of May which was the perfect kick-off to grilling season! The week started off with the Queso Blanco Cinco de Mayo Burger, then the Mouth Watering Tasty Reuben Burger, followed by the wildly popular Guacamole Bacon Burger, delicious Sautéed Mushroom & Swiss Burger with Caramelized Onions then finished off with my Homemade Black Bean Veggie Burger! If that wasn’t enough there was my Swiss Turkey Burger that is phenomenal! But wait! There’s more! How about a little chicken to switch things up?
My friend Nikki over at Chef In Training recently had a sweet baby boy! So much fun!! I can only imagine not only the fact that you’d want to spend every waking moment with the sweet new bundle of joy, but also adjusting to life with three kidlets!
