Between my Orange Banana Breakfast Smoothie, 100% Whole Wheat Waffles, Tropical Fruit & Yogurt Parfait, & Strawberry & Banana Overnight Oats I’d say I’ve been giving you some pretty tasty options! Today is National Waffle Day and I’m back with some of my blogging friends to give you a selection of fantastic waffle recipes! If you follow me on Instagram you probably saw recently that I was sent an AMAZING new Blendtec Designer 625 Blender. Love, love, LOVE it! I’ve been a fan of Blendtec for years (if you haven’t checked out my Why I Love My Blendtec: Blendtec vs. Vitamix post, it’s a must read). I’ve had so much fun these past couple of weeks playing around with it.

You are probably wondering what my blender has to do with this recipe? Well, in the next couple of weeks I will be bringing you a pretty awesome series of how to make your own flours and nut milks. In these Gluten Free Banana Nut Waffles I actually made the oat flour as well as the almond milk that I used. It is SO easy to do and I can’t wait to share with some really fun posts AND a video! Stay tuned, you are NOT going to want to miss it. Until then, you can pick up some oat flour on the shelf or in the bulk bin section of your grocery store. You won’t want to wait to make these waffles. They are DIVINE!

Ingredients

Gluten Free Waffles

  • 1 1/2 c. oat flour
  • 1 tbsp. baking powder
  • Pinch salt
  • 1 c. almond milk
  • 2 tbsp. maple syrup
  • 2 tbsp. coconut oil
  • 2 eggs

Maple Candied Pecans

  • 1 tbsp. unrefined coconut oil
  • 1 1/2 tbsp. pure maple syrup
  • 1/4 tsp. vanilla extract
  • 1 c. chopped pecans

Topping

  • 1 banana

Instructions

  1. Whisk all the waffle ingredients to combine. Ladle batter on to heated waffle iron sprayed with cooking spray. Cook until golden brown.   

  2. In a skillet over medium-low heat, melt coconut oil . Add maple syrup and vanilla; stir well. 

  3. When bubbling, add chopped pecans and stir to coat evenly. Stir constantly for about 5 minutes, being careful to not burn them.

  4. Remove pan from heat and transfer pecans onto wax or parchment paper to cool. Cool completely.

  5. Serve waffles with banana slices and pecans. Drizzle with real maple syrup if desired.

    Can I use a different oil than coconut oil for the waffles? What other oil can I use and is the measurement one for one?

      Yes, you can also use vegetable or canola and use the measurement one for one! I don’t think you’d even be able to tell a difference because it’s such a small amount! I always swap coconut oil anytime another oil is used in a recipe, so they are pretty interchangeable! Hope that helps!

      If you use the oats rather than oat flour, you’ll have a really lumpy batter.. and not really the texture you are looking for in a waffle – BUT I haven’t ever tried it, so it’s certainly something you could test out!

      Oh man, they taste identical to waffles made with regular flour. Dare I say they taste even BETTER! The series for making your own flour begins a week from today – wahoo!
