Cream Cheese Chicken Chili // The cream cheese in this Chili recipe makes it so creamy and delicious! | Tried and TastyThings have been crazy busy in my life to say the least. For times like that I look to my crock pot for a little help. All I do is prep the night before or the morning of, throw in my ingredients, and dream all night or all day about the wonderful meal that required zero work! This is an awesome chili variation. I’m finding more and more that chili is so versatile. Like most of my crock pot recipes, this one became a surefire hit with the hubster who has since requested it once a month!

Chili is such a versatile dinner and I think you'll love this Crock Pot Cream Cheese Chicken Chili version!

Ingredients

  • 1 can black beans
  • 1 can corn
  • 1 can Rotel
  • 1 ranch dressing mix packet
  • 1 Tbsp cumin
  • 1 tsp chili powder
  • 1 tsp onion powder
  • 1 8 oz package cream cheese
  • 2 chicken breasts or 5 chicken tenders frozen

Instructions

  1. Drain and rinse beans. Place chicken at bottom of pot, then pour out whole can of corn (undrained), rotel, and black beans. Top with seasonings and ranch mix. Stir together. Place cream cheese on top.  

  2. Cover with lid and cook on low for 6-8 hours.

  3. Stir cream cheese into chili. Use 2 forks to shred chicken. Stir together and let cook for 30 more minutes. You can serve alone or over rice or topped with sour cream, cilantro and chips, whatever you want!

[My 2 Cents]
I didn't have a can of Rotel on hand so I used a can of diced tomatoes and it was the perfect substitution.

    I love this recipe! My whole extended family makes it now. However, I’m now watching my intake and especially aware of carbs. The nutrition values on this say there are 3 carbs per serving. That can’t be possible with a can of black beans and a can of corn. I also came up with a total of 2329 cal which comes out to 387 cal per serving. That’s using full fat cream cheese. I usually use neufchatel cr cheese which would be fewer calories. But I still LOVE it!

    I tried this tonight and the grand kids loved it ..one suggested I put it on Fajita wraps with the sour cream…may just try that it is nice because I happened to have everything needed in the kitchen and did not have to purchase anything extra..so now I will make sure all ingredients are in the the kitchen for the days Whats for dinner and this is great since the chicken can be frozen. Next time I will have to double …Thanks for this recipe

      I’ve never frozen it so I’m not 100% sure, you could try a little bit of it and see how it reheats before freezing a whole batch!

    I have thawed chicken breasts….can I just adjust the cook time for UN-frozen chicken? Do you have a recommended time?

    Love, love this recipe. Make it for all functions and friends in need of a meal. Always use low fat cream cheese and can’t tell the difference.
