When I think of simple recipes I think of 5-ingredients or less. I think of 30 minutes or less. This egg salad recipe was so easy to put together I almost thought I missed a step. It’s just as easy (if not even easier) than my Healthy Avocado & Egg Salad Sandwiches. I’m always hunting down quick ideas for my lunch hour. It never fails, I’m hurried on my lunch break and need something quick. What I love most about this egg salad recipe is the pure creaminess. It’s wonderfully creamy and perfect!
With the endless amounts of bread choices we have in our fridge and freezer I opted to go with the Dave’s Killer bread that we are a fan of, but I’ve also enjoyed this egg salad recipe in the whole wheat Ezekiel Pitas that we also love. It would be great too on the wheat rounds (thin sandwich bread). All of the above are healthy options and paired with the egg salad makes for the perfect protein packed meal!
Did you know that you can hard boil an egg in the oven? Ever since I found that out it’s been the only way that I’ve been doing it since. I love not having to babysit the boiling water and making sure I start the time when I’m supposed to (I’ve never been good at boiling eggs). Plus, with the oven method you can boil a bunch at the same time with ease. There are many how-to’s online, here’s one. I like to boil about a dozen at a time and keep them on hand for a quick snack.
Creamy Greek Yogurt Egg Salad Recipe
This Creamy Greek Yogurt Egg Salad is a delicious quick lunch idea that is ready in no time!
Ingredients
- 6 eggs boiled
- 1/2 c. greek yogurt
- 2 tbsp. mayo
- 1 tsp. yellow mustard
- 1-2 tsp. dried dill
- Salt & Pepper to taste
- Whole wheat bread
Instructions

In a medium-sized bowl, chop your eggs until desired consistency (I like mine a little chunky, but not too chunky). I found it easiest to run my eggs through my egg slicer.

Add yogurt, mayo, mustard and dill; season with salt and pepper. Stir until all ingredients are evenly distributed. Spread over your choice of bread, top with another slice of bread.

Oh, I haven’t ever put dill in egg salad. Yummy! On another note, I did put dill in your recipe for turkey apple meatballs and it works!
