Win/Win! | Tried and TastyHave you noticed how much I love to copycat recipes around here? I’m borderline obsessed. I just LOVE the amount of money you can save by eating at home. Because I love to cook, we rarely go out to eat. Generally we will go out once maybe twice a month. Aside from that, it’s at home meals for us. Granted, every night isn’t a gourmet meal.. we eat at home more often than not. The funny thing is I actually don’t even like Chili’s. You couldn’t even get the hubs to touch that place with a 10 foot pole. So why would I chose to copycat a Chili’s recipe? Because it’s DELICIOUS!!!

I’m a huge fan of Mexican food. Love chips and salsa. Love guacamole. Love tacos. Burritos. Nachos. And I LOVE enchiladas! This chicken enchilada soups is on point. It’s thick, it’s warm, and it’s comforting. Exactly what you’d like to have in the middle of winter. Unless you are having a winter like we are here in Utah. I’d hardly call it a winter at all. We’ve had the most gorgeous weather I can ever remember having this time of year. It’s absolutely insane and I’m loving every single second of it. The weather may be nicer than usual, but that hasn’t stopped me from having a good comfort meal. This copycat soup is {dare I say} BETTER than the original! Copycat Chili's Chicken Enchilada Soup

Ingredients

  • 4 large chicken boneless skinless breasts
  • 1 tbsp. vegetable oil
  • 1 med onion finely diced
  • 3 garlic cloves minced
  • 3 32 oz. cartons chicken stock
  • 1 10 oz can red enchilada sauce
  • 2 c. shredded cheese
  • 2 c. masa harina
  • 1 tbsp. chili powder
  • 1 tbsp. cumin
  • salt and pepper to taste

Garnish (optional)

  • Sour cream
  • Fresh diced tomatoes or pico de gallo
  • Extra shredded cheese
  • Cilantro
  • Lime
  • Corn tortilla chips

Instructions

  1. Heat oil in a large stock pot over medium high heat. Season chicken on both sides with salt and pepper, sear on both sides. Remove from heat and set aside (doesn't need to be cooked through). 

  2. Add diced onion and garlic to the pot and saute until aromatic, no longer than one minute (being careful not to burn the garlic). 

  3. Add in the chicken stock and place the chicken back in the pot. Cover and let simmer for about 30 minutes or until the chicken is cooked through to 165 degrees F. Remove chicken once more; shred. 

  4. Whisk the masa harina a little at a time with the remaining stock and add in remaining ingredients including shredded chicken (excluding garnishes). Cook for about 30 minutes or until thickened; stirring occasionally making sure the bottom doesn't burn. Serve with your favorite garnishes. Enjoy!

        Yikes!! I bought Mezcla para tortillas de harina instead of masa harina. That’s all I could find at my Walmart. Hope it works!?!?!?!?

    omg so good the only thing different I added one cup of salsa and didn’t thicken with maza I use one can of refried bean s came out great love it

    Thank you for sharing this recipe. I often cook for crowds. I need to cook next month for a Boy Scout training and a staff of at least 25. I will try this on them. I know we’ve all had it at Chili’s before. I’ll serve with quesadillas and a salad as a meal.
