The batter for these delicious little melt-aways smells A-Ma-Zing (the orange juice really makes the sweet aroma lovely)! You may want to start out by doubling the recipe, these little treats go by so fast!

These Coconut Macaroons cookies are a little bit of coconut heaven! Whip them up for a special Christmas treat, or enjoy them all year round!

Ingredients

  • 1/3 c. butter softened
  • 3 oz. cream cheese softened
  • 3/4 c. sugar
  • 1 egg yolk
  • 2 tsp. orange juice
  • 1 tsp. vanilla or almond flavoring your choice
  • 1 1/4 c. all-purpose flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 3 3/4 c. coconut

Instructions

  1. Beat together butter, cream cheese, and sugar in a large bowl until well blended. Add egg yolk, orange juice, and vanilla.    

  2.  Stir together flour, baking powder, and salt. Add to butter mixture until well blended. Stir in 3 c. coconut.

  3. Cover. Refrigerate 1 hour or until firm.

  4. Heat oven to 350.

  5. Shape dough into 1-inch balls. Roll balls in remaining 3/4 c. coconut.

  6. Place on cookie sheet. Bake 10-12 minutes. Cool. Transfer to wire rack.
