Oooh, this was great. I love coconut, and this had just the right amount. It was subtle and light. I bookmarked this (before the days of Pinterest) long ago and hadn’t gotten around to making it. So glad that I did. I’ve been into baking breads (more than usual) recently and I’m excited to have another go-to recipe on my list. Thankfully I had all the ingredients on hand, including the evaporated milk. It was my last can though. I better add it to next months shopping list!
Ingredients
- 8 ounces 1 c. all purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon kosher salt
- Pinch of cinnamon
- 4 ounces 1/2 c. unsalted butter, melted
- 2 eggs
- 4 ounces 1/2 c. granulated sugar
- 1 teaspoon vanilla extract
- 8 ounces 1 c. evaporated milk
- 8 ounces 1 c. finely grated coconut
Instructions

Preheat the oven to 350 F. Spray the inside of a loaf pan with nonstick cooking spray.

In a medium bowl, whisk the flour, baking powder, salt and cinnamon and set aside.

In another medium bowl, combine the butter, eggs, sugar, vanilla extract and milk. Then pour the wet ingredients into the flour mixture and mix using a wooden spoon or a rubber spatula mix until all the ingredients are combined. Stir in coconut.

Pour the batter in the prepared loaf pan. Bake for 50-60 minutes or until firm to the touch and a toothpick inserted into the center of the cake comes out clean. Cool completely over a rack before slicing and serving.

What size loaf pan? I have several different sizes. it will make a big difference.Thanks.

I used mini loaf pans, so if you are using various sizes I would just make sure you have enough to fill about 2/3 of the way full!

I just found your blog today and have had a couple fun hours going through many many posts.
This is probably a dumb question, but I’m guessing you used unsweetened coconut from a package? Not fresh coconut or sweetened “angel flake” coconut?

Ohmygoodness – I’m so happy to have you!! A couple of hours?? Yay! That’s fabulous! No question is a dumb question – promise. For this post I actually did use the sweetened “angel flake” coconut. However, since then I’ve actually changed my ways and won’t cook with that any more (lots of yucky ingredients). So if I were to recommend what you should use.. I would say the unsweetened coconut (I buy mine in bulk at my local health food store). But of course, you can use either! I hope you come back, there will be lots more yummy recipes to come!

what if i want to add bananas, how much should i add and what other changes do i need to make if any to compensate for the added bananas?

I have just made these. I let my dad be the first to taste it, I said that it was coconut bread, but he said: bread? I think its more a cake! I do agree, mine wasnt that high (probably the loaf pan was too long), and it was really buttery inside. I melted butter, and made sure it was a half cup, that is the way to do it right? Or was I supposed to measure half cup butter and then melt the butter? Cheers *Nilou!
