I love Personal Pita Pizzas. They are my go-to when I’m in a hurry and also great when I’m having a hard time figuring out what to eat. We always keep the Ezekiel Whole Grain Pocket Bread on hand, so I can all ways fall back on a pizza if I need to. What’s so great about pizza? You can customize it any way you want to. Most common I will have it the traditional way with red sauce, cheese, and salami. I decided I wanted to switch things up and try something different for once.

I had a few chicken breasts that I needed to cook up and since the weather has been so nice I decided to throw them on the grill. That’s when the idea of a grilled chicken pizza came to me. I had the white sauce and the cheese, and thankfully a few spinach leaves left in the fridge. About 20 minutes later I had this fantastic meal. I had been contemplating making pizza dough, but in a time crunch the pita pocket works just as well!

This Grilled Chicken & Spinach Pita Pizza is a great way to add a bit of sophistication to pizza night!

Ingredients

  • 1 Ezekiel Whole Grain Pita Pocket
  • 1/4 c. Alfredo sauce
  • 1/4 c. mozzarella cheese
  • 1/2 c. spinach
  • 1 4oz grilled chicken breast, thinly sliced
  • garlic salt

Instructions

  1. Preheat oven to 425 F.

  2. Line baking sheet with foil & spray lightly with cooking spray. Evenly spread your pita with Alfredo sauce and top with cheese, spinach, grilled chicken, and garlic salt.

  3. Bake for 8 minutes.

Recipe Notes

If you love cheese as much as I do, freshly grate some parmesan and once the pizza has baked, sprinkle a little on and broil for a minute until cheese has melted.
