I am SO excited for this month’s Rhodes post! I was given the task to come up with a fun recipe for children’s after school snacks and/or lunch box ideas. To help launch the incredibly adorable *new* Rhodes Kids Baking Site I created these undeniably cute Chicken Salad Frog Sandwiches! I mean seriously. Are these just not the cutest things you’ve ever seen!?! Seriously though, how fun would this be to have in your lunch box at school? You’d surely be the star of the lunchroom and EVERYONE would want to trade lunches with you!
I may not have any children of my own, but that doesn’t mean I don’t know my fair share of kids that would have an absolute blast in the kitchen making these fun little reptiles! They are really so simple to put together and only require five ingredients. A great way to get your children to eat (from what I hear) is to get the kiddos in the kitchen helping make their food. They will love making their own frog and you’ll enjoy the family time around the table.
Chicken Salad Frog Sandwiches
Ingredients
- 1.5 Rhodes Texas sized rolls
- 1 tbsp butter
- 1 cup your favorite chicken salad
- lettuce
- 1 oz salami
Instructions

Once your rolls have thawed, you'll gently press two indents towards the front of each roll. With one of your thawed rolls, you will cut it into eight equal pieces. Carefully form the small pieces into little balls.

Brush each roll generously with melted butter. Preheat your oven to 350 degrees.

Bake rolls for 10 minutes, remove from oven and brush with the remaining butter, bake for an additional 10 minutes until golden brown.

Remove from oven, Place on a cooling rack and cool completely.

Once rolls have cooled, slice in half about 3/4 through (not all the way across). Stuff with lettuce and chicken salad. Cut salami in to strips and use as the 'tongue'. For the eyes, use chocolate chips!
