Ingredients

  • 3 c. water
  • 4 tsp. chicken bouillon
  • 4 tsp. minced garlic
  • 1/2 bunch cilantro
  • 1 can 4 oz green chilies
  • 3/4 tsp. salt
  • 1 tbsp. butter
  • 1/2 onion
  • 3 tbsp. lime juice
  • 3 c. white rice

Instructions

  1. Blend cilantro, green chilies, onion, and lime juice together in a food processor until just about pureed.  

  2. Bring water to a boil and add all ingredients.

  3. Simmer, covered, on low for 30 minutes (or until rice is tender).

    Made this with the chicken enchiladas – I halved the recipe because I know rice makes a lot, and so mine didnt turn out so great. It smelled yummy but didnt taste right and all my liquid was gone before it finished cooking so it was hard. I will try again some day.

    Hey there – made this tonight with dinner and it was great. Only thing was I used Jasmine rice and had to add a bit more liquid but- great flavor! ;-)
