My love of pizza continues! [Insert broken record] Have I mentioned once or twice or maybe a zillion times how much I love breakfast? Marry my love of pizza with my love of breakfast and BOOM this baby was born. I’ve seen these types of pizzas all over the interwebs of course but I myself had never made one. I figured it was time. First question I asked myself after the first bite: what took me so long?!?! For realzies. This is such a good way to start your day.. or end your day.. however you like to roll. Or if you are like me start AND end your day. Don’t judge me.
I used my favorite pizza crust that I use ALL the time from Ree Drummond, you know, The Pioneer Woman? No bigs. I’ve totally partied with her. Well ever since I made her crust a year or two ago I have a hard time venturing out to any other recipe. It’s so good and it’s so easy. Need or want other examples of how I’ve used it? Breakfast Pizza
Make breakfast fun with this delicious Breakfast Pizza! Eggs, bacon and cheese + a crust is all you need. Great the morning of and also still tasty as leftovers!
Ingredients
- Crust
- 1 tsp. instant or active dry yeast
- 1-1/2 c. warm water
- 4 c. all-purpose flour
- 1 tsp. salt
- 1/3 c. olive oil
Pizza
- 4-5 eggs
- 1 c. fresh cooked bacon chopped
- 1 c. mozzarella cheese
Instructions
For the crust

In a small bowl, sprinkle yeast over (very) warm water; let stand for a few minutes and set aside.

In a stand mixer, using the paddle attachment, combine flour and salt. With the mixer running on low speed, drizzle in olive oil until combined with flour.

Next, pour in yeast/water mixture and mix until just combined, and the dough comes together in a sticky mass (clean from the sides of the bowl).

Coat a separate mixing bowl with a light drizzle of olive oil, and form the dough into a ball. Toss to coat dough in olive oil, then cover the bowl tightly with plastic wrap and set it aside for 1 to 2 hours, or store in the fridge until ready to use.
For the pizza

Preheat oven to 500 degrees.

Roll/stretch out one pizza crust (recipe makes two). Lay on a sheet pan or pizza pan/stone drizzled with olive oil.

Evenly spread mozzarella cheese across the top of the crust leaving about an inch from the edge. Top bacon bits . Crack eggs over top ver carefully keeping a little bit of space between each egg.

Bake for 10 to 15 minutes, or until crust is golden brown and toppings are bubbly. Slice and serve immediately. Repeat with other crust and other ingredients, or save for later!
