Are you as excited as I am? It’s a HOT one here in the parts where I am and it snuck up on us out of NOWHERE. One second it’s raining every time you turn around and the next second you could fry an egg on the driveway. Drastic I tell you. With the summer heat I’m always drawn to berries. They are my favorite things to snag at my local farmers market. So fresh. So vibrant. So delicious! What’s your favorite berry? So many to choose from!

I’ve been itching to try a fruit salad with a sweetened citrus-ee glaze made without any refined sugar. I wanted to last summer but never got around to it. This year I was determined. I saw the berries and had to run with it. While I’ll be honest with you, I really truly only love strawberries – the rest of them I could take or leave (mostly leave). Truthfully, I struggle with raspberries (and blackberries for that matter) because of the seeds. I know. You probably think I’m crazy. But I just have the hardest time when those little buggers get in my teeth. The hubs on the other hand loves all the berries, so this salad works perfectly for the both of us. Something for everyone.

Ingredients

  • 1 lb. strawberries
  • 1 pint raspberries
  • 1 pint blackberries
  • 1 pint blueberries
  • 1/8 c. honey
  • 1/2 c. fresh squeezed lemon juice

Instructions

  1. Mix together lemon juice and honey. Drizzle over fruit. Mix well to coat evenly.
