Double-Baked Crazy-Crisp Parmesan Oven Fries // A crispy fry that's oven baked for a healthier alternative to the traditional deep fried. These Parmesan Oven fries will be the perfect compliment. I love a good french fry. However, they are a guilty pleasure when deep fried…so I wanted to try to master the art of a crispy fry without the fryer. When I saw the idea to double-bake potatoes I knew that is exactly what I’ve been looking for. You originally saw these with my Mouth Watering Reuben Burgers (if you didn’t see that burger, you MUST run over and see it!). But wait. Salt and fries go together like peanut butter and jelly. Parmesan? Now that’s my secret ingredient! I love parmesan cheese! I amped these fries up with a touch of parmesan and the perfect french fry was born.

These Double-Baked Crazy-Crisp Parmesan Oven Fries are a crispy fry that's oven baked for a healthier alternative to the traditional deep fried. Throw in some parmesan cheese and you've got the tastiest fries around!

Ingredients

  • 6 medium potatoes
  • 1-2 tbsp. olive oil
  • 4 oz. parmesan cheese
  • Salt to taste
  • Parsley optional

Instructions

  1. Preheat oven to 350 F. Set a cooling rack over each of 2 baking sheets.

  2. Peel potatoes and cut lengthwise into very thin slices (the thinner, the crispier), Cut slices into equally thin strips.

  3. In a large bowl drizzle fries lightly with olive oil and salt. Arrange fries on the cooling racks in a single layer being careful not to overcrowd.

  4. Roast for 30 minutes.

  5. Remove fries and increase oven temp to 425 F. Toss the fries in a large bowl with parmesan and parsley.

  6. Return to oven and bake until very crispy and brown, 15-20 minutes.

Recipe Notes

I prepared my fries a day in advance. Once cut, I placed in a bowl, covered with water, and refrigerated until ready to use.

    If I substituted sweet potatoes, but followed the same process, would the sweet potatoes be extra crispy? I did see your sweet potato fries recipe. I am looking for a crispy baked version. Thanks!

      It seriously works like a charm! Having them on the cooling rack also helps keep the fries circulated!

    These look to die for! I have never heard of double baked; this sounds so great. Betcha it would work good with sweet potatoes too.
