Do you ever feel like it’s the frosting that just makes the cake or cupcake? I certainly do. Either I scrape it all off because it’s just not good enough, or a can’t get enough of it. This Creamy Vanilla Whipped Cream Cheese Frosting is one of those that I just can’t get enough of. It’s so light and airy, it’s almost like you’re eating a cloud. The vanilla is a subtle surprise that is the perfect amount of flavor. Of course cream cheese always makes frosting better if you ask me (check out my Cream Cheese Frosting recipe)!
I’ve been wanting to make an Easter treat and wasn’t sure which direction I wanted to go. Cupcakes have kinda been my thing lately. Between my Lemon Curd Filled Cupcakes with Lemon Buttercream Frosting and The Best Vanilla Cupcake Recipe with Vanilla Buttercream Frosting I felt like it was time to change things up a bit. While I love buttercream, a nice light and creamy frosting was screaming my name. With vanilla pudding as the secret ingredient I was excited to whip this up and knew it would be perfect atop a light and moist white cake cupcake!
