Asparagus is underrated and underused in our house. I seriously LOVE it! In fact, I was reminded how much I love it when I recently went out to dinner with a couple of girlfriends and my dish came with it. It was cooked so perfectly I almost wanted to ask for seconds as I finished off the last spear. It was absolutely perfect. I’m in the process of creating a ‘copycat’ of that meal because it is my favorite and I can’t afford to visit the restaurant on a weekly basis. I can’t wait to share it with you (once I’ve got it perfected of course)!
When I think of asparagus I think of warm weather. Is it a warm weather vegetable? Certainly.. aren’t most of them? Anyhoo. With the temps teasing us in my neck of the woods of springtime (and then taunting us with snow intermittently) I was just itching to make this. This recipe is just as easy as my Roasted Parmesan Asparagus recipe that I use as my go-to typically. I enjoyed this with a parmesan crusted tilapia fillet, but my Honey-Mustard Salmon with Roasted Asparagus recipe is also pretty great. When I recently went to the Harmons Blogger Event – City Creek we chopped it in bits and added it to our risotto. It was amazing! However you prepare it, surely it will be wonderful.
Ingredients
- 1 lb. asparagus washed
- 1 c. water
- 1 tbsp. butter
- 1/4 tsp. garlic salt
- 1/4 tsp. black pepper
- 2 tbsp. grated parmesan cheese plus more for garnish
Instructions

Remove the bottom 1 - 1/2 inches from the bottom of your asparagus & discard.

Place spears in a pan wide enough to hold them without bending (you can layer if you need to). Add water and place on high heat. Cook, covered, on high for 4-6 minutes, depending on the thickness, until tender yet firm. Carefully shake your spears back and forth halfway through your cook time.

Discard remaining liquid. Place butter, garlic salt, pepper, and grated Parmesan over your spears, and begin to saute them over medium high heat until butter is melted and the Parmesan melts and turns light brown. Be careful not to burn. Remove from heat, sprinkle with extra Parmesan for garnish..
