I was only recently introduced to butternut squash, thanks to a kind and generous friend for sharing her garden bounty. I fell in love with the butternut squash soup recipe she gave me and was excited to continue trying various dishes and soups with this delicious vegetable. When I found this recipe including apples I knew I had to try it! The smoky flavor, the sweetness that the apples bring, the smooth texture and rich flavor of this butternut squash soup is a unique and delightful blend. I wanted to experiment with a warm appetizer for my next holiday meal and I’ve found the perfect balance with this wonderful butternut squash soup recipe!
Smoky Apple and Butternut Squash Soup
Nothing says fall better than this delicious and warm Smoky Apple and Butternut Squash Soup!
Ingredients
- 1 tbsp. butter
- 1 tbsp. olive oil
- 3 large onions approx. 4 1/2 c. finely chopped
- 1 tsp. smoked paprika
- 2 lbs. approx. 6 c. butternut squash, peeled and cut into chunks
- 1 lb. approx. 3 1/2 c. sweet apples, peeled and cut into chunks
- 1 c. apple juice more if necessary
- 1 c. chicken broth
- 1/2 tsp. salt
- 1/2 tsp. ground black pepper
Instructions

Heat butter and oil in a large stockpot over medium heat. Add onions and smoked paprika; cook, stirring until the onions are tender, about 10 minutes.

Add squash, apples, apple juice, chicken broth, salt and pepper; bring to a boil. Cover and cook over low heat until the apples and squash are very soft, about 30 minutes. Cool.

Puree with an immersion blender, food processor, or blender.

Return to the stockpot and bring to a simmer, adding more apple juice or broth if needed.

Garnish with sour cream swirls and/or apple slices if desired.

[My 2 Cents]
With most of the other blended soup that I've done, I usually use my immersion blender. With this soup, I decided to run it through a course in our Blendtec. I'm so happy that I did. While the immersion blender will puree your squash and apples, the blender was actually able to make a velvety smooth texture - which is more of what I had in mind. Depending on your preference, you can use either method of blending!
