Cake Batter Cookies

If you are looking for a good cookie to go to in a pinch look no more. I always have cake mixes on hand. Lots of them in fact. You just never know when you will need one. Using the cake mix as the cookie batter takes all the hard work out of making cookies. You can use any flavor you like (I used yellow, but contemplated between french vanilla and white as well). You can also add in any other mixins that you want. The options are endless :)

1 (18.25 oz.) box cake mix
1 tsp. baking powder
2 eggs
1/2 c vegetable oil
1 c semisweet chocolate chips

Preheat oven to 350. In a medium bowl, stir together the cake mix and baking powder. Add eggs and oil, then mix until well blended. Stir in chocolate chips, or your choice of additions. Drop by rounded spoonfuls onto cookie sheets. Bake for 10 minutes in the preheated oven. Allow cookies to cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.

    My most favorite combination of cake mix cookies is chocolate cake mix with white chocolate chips…. taste like my favorite cookies from subway!! I’ve never put baking powder in mine though, I’ll have to try that next time!!!

    My Mother shared a “cake batter” cookie recipe with me many years ago so my daughters could make cookies them selves. It didn’t call for baking powder either. We always put M&M’s in them though. This is a very simple recipe for young children to make and the end result puts a huge smile on their faces.
