The other day at work one of our members brought in some home grown vegetables from his garden. They were all up for grabs so I snagged a few zucchini. HUGE zucchini. I made banana bread last week and it was so delicious I thought it would be fun to try zucchini bread. I don’t remember if/when the last time I ever had zucchini bread before. If I have had it, it had been so long that I forgot what it tasted like. I couldn’t have used a better recipe to experiment with. This bread was FANTASTIC. Really. Fantastic. Granted, there’s enough sugar and oil to last you a lifetime – you won’t want to make it all the time. Occasionally would be just fine though! You have to try it, it’s SO good! Of course I omitted the nutmeg… BLEHCK!

1 c. vegetable oil
3 eggs, beaten slightly
1 1/2 c. sugar
1 1/2 c. brown sugar
3 tsp. vanilla
3 c. flour
1 tsp baking soda
1 tsp. nutmeg
1 tsp. cinnamon
1 tsp. salt
1 tsp. baking powder
2 c. grated zucchini
1/2 c. nuts, optional
Preheat oven to 350. Beat oil, eggs, both sugars, and vanilla together. In a medium bowl, sift together dry ingredients. Add dry ingredients alternately with zucchini. Stir in nuts. Bake for 50 minutes.

I love nuts, so I added in chopped walnuts. I chopped them pretty fine. In the future I would add 1 c. chopped instead of 1/2 c. – there weren’t very many when I chopped the 1/2 c. I would also recommend coarsely chopping them instead of finely chopping them. Which I didn’t do but wished I had

I was just thinking about you and zucchini in the same sentence. I was going to request that you hunt down and post a great zucchini recipe because it’s that time of year again. There is a point in every summer where Drew says to me, “No more zucchini/yellow squash on my sandwiches, please.”
We need more recipes to use up those abundant critters!
We have about a zillion zucchini from our garden. I’m getting a little ‘zucchini-ed out’, but I’ve yet to try zucchini bread and this recipe sounds delish

My husband makes very good zucchini bread – and he adds chocolate chips (any good milk chocolate kind)!!! Very, very good!
