I’m a salad lover. I remember when I was little and my family used to go to Sizzler, or even when we used to go to buffet resarants I would always go for the salad first. I loved piling on all the yummy toppings and drizzling/drenching them in the oh so wonderful ranch dressing. I’ve always loved salads. Little did I know, depending on the amount of dressing they aren’t so good for you. This is just your typical salad with a great assortment of veggies and some turkey and bacon for added taste. We didn’t have cubed turkey, so we just used turkey deli slices and cut them into little pieces. I also didn’t have the recommended dressing, so I just used the ranch we had. I made sure to measure the right serving to keep the calories down! Also, the homemade croutons were divine. Never buying store bought again! I even sprinkled on some garlic salt before baking and they were perfect!

2 slices whole-wheat bread, cut into cubes
1/2 tbsp. olive oil
4 strips bacon, cooked and crumbled
1 large tomato, chopped
1/2 English cucumber, chopped
8 oz. roast turkey from the deli, cut into cubes
1 large head romaine lettuce, chopped
Low-fat ranch dressing (we like Bolthouse Farms) or Homemade Ranch
Preheat oven to 400. Toss the bread cubes with the olive oil, place on a baking sheet, and bake for about 10 minutes, until golden brown and crispy. Combine the croutons with the bacon, tomato, cucumber, turkey, and romaine in a large salad bowl. Toss with just enough dressing to lightly coat the leaves. Divide among four plates.
