This past week I’ve been on a lemon themed posting spree and loving it! The funny thing is we’ve been buying lemons by the bulk (at Costco) for months and months now and I’ve never batted an eye. My husband has to have lemon juice in his water, and prefers freshly squeezed. On a side note, Costco is the best place to buy lemons. They are HUGE and beautiful. We had run out and so I picked some up at Target and they were scrawny and pitiful looking. Anyway, recently I’ve been finding all sorts of delicious recipes that I’ve been dying to try. I’m 3 for 3 with the all that I’ve tried so far. I’ve got more up my sleeve, but I figure I better spread the lemon love across the summer rather than all at once (for those who don’t love it as much as I have found that I do).

Today’s Monday Fav and Must Have has definitely been a “must have” for all of my recent recipes! The Microplane Zester/Grateris a life saver!!! You wouldn’t believe how many zesters I’ve gone through to get to a good one. I tried so many, and then ended up taking them all back because they were either crap or not exactly what I needed for the job. One that I bought was grating the lemon so fine I couldn’t even find anything on the other side of the grater. I looked on Amazon and not only did this one come in my favorite color (green!), but it had awesome reviews. 4.5 out of 5 stars from 34 reviews. It’s worth the rating indeed.

I’ve been asked what the difference between lemon zest and rind is. In researching, I found this great information from MyRecipes.com:

Technically speaking, the zest is the colorful portion of the peel or rind. The peel or rind refers to the entire skin—both the colorful outer portion and the bitter white pith that lies right beneath it. The white pith is bitter and unpleasant, while the zest has the bright flavor of the fruit.

But whether a recipe calls for grated lemon (or orange or lime) zest, peel or rind, you won’t want to use that unpleasant white pith. It’s the colorful zest that adds the bright acidic flavor of the fruit.

And speaking of zest, here’s a neat tip. When grating the zest of a citrus fruit, grate the whole thing, even if you only need a small amount. Place the extra grated zest in small airtight pouches made of plastic wrap, and keep them in the freezer. They’re terrific to have on hand when you need to brighten a soup, sauce or dressing.
