I recently attended a wedding luncheon at the reception center where my husband and I got married. It was the first time we’d been back since we got married nearly two years ago! Ahh, what wonderful memories. One of the sides they served was a strawberry salad and strawberry vinaigrette. One bite and I was lost. I knew I just had to have the recipe. It was divine. I’d never had a strawberry salad, let alone strawberry dressing before. So, I emailed over in hopes they would share their secret with me. No such luck. As I was surfing blogs one night I discovered this recipe! Ecstatic, I knew I needed to make it immediately. But not before first, perusing the Cheeky Kitchen for at least an hour drooling at recipe after recipe. That night I discovered and un-discovered (to me) treasure of a blog. She has some amazing stuff over there you need to check out! Anyway, I made the dressing and it was everything I hoped it to be. I also learned in my search that strawberry salads and strawberry dressings are incredibly popular in the blog world right now. Who would have thought?!

1 clove garlic
1/8 slice of a small purple onion
1/4 c sugar
1/4 c fresh strawberries, raspberries (or 2 T. raspberry jam)
1/3 c white vinegar
1/2 c extra light olive oil
1/4 tsp salt
1 tbsp poppyseeds
Place all ingredients (except poppyseeds) into a blender. Blend until entirely pureed. Stir in poppyseeds. Serve immediately over your favorite salad for store for up to 48 hours

I actually tried this two different ways and like them both. I tried the first batch with balsamic vinegar instead of white, and the second batch with white vinegar as the recipe suggests. Each had a slightly different flavor but they both were great. If you have once vinegar in your cupboard and not the other don’t hesitate to try this! Pictured is the dressing with the white vinegar. The balsamic makes the dressing a darker/richer color.
