Peanut Butter Popcorn

Oh man, oh man, oh man! This is hands down my fav new popcorn! I’ve got a couple of caramel popcorn recipes that I love, but this recipe beats them all! I love the tip about not boiling the sauce too long, otherwise your popcorn will be rock hard. I’ve always wondered what caused that – and now I know! I timed mine when it started boiling and only boiled it for 1 minute exactly and it was perfect! This is the perfect compliment to a great movie and a blanket :)

1/2 c. unpopped popcorn or 16 cups popped popcorn
1 1/2 c. dry-roasted peanuts
1 c. sugar
1/2 c. honey
1/2 c. corn syrup
1 c. peanut butter
1 tsp. vanilla

Pop corn and remove any unpopped kernels. Place in a large bowl and stir in peanuts. In a heavy saucepan, combine sugar, honey and corn syrup. Bring mixture to boiling, continue boiling for 1-2 minutes, stirring constantly. Do not boil too long or your popcorn will be rock hard. Remove from heat. Stir in peanut butter and vanilla. Immediately pour over popcorn and stir to coat.

    I tried one of your caramel recipes that you posted, and that one was delicious….so I will definitely be trying this one, especially since I love peanut butter!

    I made this twice last week for some parties and everybody was in heaven, people even licked the bowl (okay I admit that was me). And the best part is – is that it only takes like 5 minutes to make and it’s so good. Thanks Yvonne!
